- 1 lb. catfish fillets
- 1 cup uncooked long-grain rice
- 1 can diced tomatoes, drained
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 jalapeno pepper, seeded and minced
- 1/2 tsp. paprika
- 1/4 tsp. cayenne pepper
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 2 cups chicken broth
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
- Preheat oven to 375°F.
- In a large oven-safe skillet or cast-iron pan, heat 1 tbsp. oil over medium heat. Add the catfish fillets and cook for 3-4 minutes per side, until lightly browned. Remove from the pan and set aside.
- In the same pan, add another tablespoon of oil and sauté the onion and jalapeno pepper until the onion is translucent. Add the garlic and cook for another minute.
