  • 1-2 red snapper fillets
  • 1 cup jasmine rice
  • 2 cups water
  • 2 tablespoons vegetable oil

  • 4 garlic cloves, minced

Instructions

  1. Rinse and pat dry the red snapper fillets. Set aside.
  2. Rinse the jasmine rice until the water runs clear.
  3. In a medium-sized saucepan, bring the water to a boil and add the rice. Reduce heat to low and let the rice simmer for 18-20 minutes or until done.
  4. In a large skillet over medium-high heat, add the vegetable oil, onion, and garlic. Cook until onion is translucent, about 3-4 minutes.
  5. Add the oregano, smoked paprika, and cayenne pepper to the skillet and stir well.
  6. Add the diced red bell pepper and jalapeno pepper and cook for another 3-4 minutes.
  7. Add the can of diced tomatoes, cilantro, lime juice, salt, and pepper to the skillet and stir well.
  8. Place the red snapper fillets on top of the tomato mixture and let cook for 5-7 minutes or until the fish is cooked through.
  9. Serve the red snapper over a bed of jasmine rice and spoon the tomato mixture on top of the fish and rice.
