Instructions

  1. Heat a large pan or wok over high heat. Pour in 2 tablespoons of vegetable oil and swirl the pan to coat the bottom evenly.
  2. Place 1 lb. of thinly sliced flank steak in the pan or wok. Cook the steak strips, stirring occasionally, until browned on all sides. This should take around 5 minutes. When done, remove the steak from the pan, and set it aside.
  3. Add the sliced red bell pepper and yellow onion to the hot pan. Stir occasionally for 5 to 7 minutes or until the vegetables become tender.
  4. Mince 2 cloves of garlic and add them to the pan. Cook for an additional minute.
  5. Add 1 tablespoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of paprika, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of cayenne pepper to the vegetables. Mix until the spices are evenly distributed.
  6. Add 2 cups of cooked white rice to the pan. Mix the rice with the vegetables until everything is well mixed.
  7. Add the cooked steak back to the pan. Stir the meat until it’s fully mixed with the vegetables, and then remove the pan from heat.
