  • 1 lb ground turkey
  • 2 cups cooked white rice
  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced

Instructions

  1. In a large skillet over medium-high heat, add 1 tablespoon of vegetable oil to heat up. Add in 1 diced onion and 3 minced garlic cloves to sauté until transluscent.
  2. Add 1 pound of ground turkey to the skillet and let it cook until it’s browned, breaking it up with a spoon as it cooks.
  3. Next, add the diced red and green bell peppers to the skillet and continue cooking for another 5 minutes until they are softened.
  4. Open a can of diced tomatoes and add it into the skillet along with 1 teaspoon of paprika, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 2 tablespoons of soy sauce. Stir to combine all the ingredients together.
  5. Cover the skillet with a lid and let the mixture simmer over medium heat for about 5 minutes until the liquid in the skillet reduces and thickens.
  6. While you’re waiting, cook 2 cups of white rice following the instructions on the bag.
  7. Serve the turkey mixture on top of the cooked white rice and garnish with 1/4 cup of chopped cilantro.
