  • 1 lb. dried shrimps, soaked in hot water for 10 minutes and drained
  • 3 cups jasmine rice, rinsed and drained
  • 3 tablespoons vegetable oil

  • 1 teaspoon salt
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon sugar
  • 3 green onions, thinly sliced

Instructions

  1. Heat the oil in a large wok or pot over high heat.
  2. Add the mushrooms and stir-fry for 3-5 minutes, until they release their liquid and are slightly browned. Remove the mushrooms from the wok and set aside.
  3. Add the dried shrimps to the wok and stir-fry for 2-3 minutes, until fragrant.
  4. Add the rinsed rice to the wok and stir-fry for 2-3 minutes, until slightly toasted.
  5. Add the water, salt, soy sauce, oyster sauce, and sugar to the wok. Bring to a boil and then reduce the heat to low.
  6. Cover the wok and simmer for 12-15 minutes, until the rice is tender and the liquid has been absorbed.
  7. Stir in the reserved mushrooms and green onions. Cover and let the rice rest for 5 minutes.
  8. Fluff the rice with a fork and serve hot.
