Ingredients

  • 1 cup Jasmine Rice
  • 2 cups water
  • 2 tilapia fillets
  • 2 tablespoons vegetable oil
  • 1/2 cup sliced shitake mushrooms
  • 1/2 cup sliced snap peas
  • 2 tablespoons soy sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 2 green onions, sliced

Instructions

  1. Rinse the rice in cold water until the water runs clear. Drain the rice.
  2. In a pot, add the rice and 2 cups of water. Bring to a boil.
  3. Reduce heat to low and let the rice simmer for 18 to 20 minutes covered.
  4. In a large pan, heat up vegetable oil over medium-high heat.
  5. Add the tilapia fillets and cook for 2-3 minutes per side until golden brown.
  6. Remove the tilapia from the pan and set it aside.
  7. To the same pan, add the shitake mushrooms, snap peas, and garlic. Stir-fry for 2 to 3 minutes.
  8. Add the soy sauce, sugar, and black pepper. Stir-fry another 1 to 2 minutes.
  9. Add the cooked rice to the pan. Stir to combine with the vegetables and sauce.
  10. Flake the tilapia fillets into the pan and stir gently to mix evenly.
  11. Sprinkle with sliced green onions, and serve hot.
