  • 1/2 lb lean pork, sliced

  • 2 tablespoons vegetable oil

  • 1 tablespoon oyster sauce
  • 1 tablespoon sugar
  • 1 cup chicken broth
  • 1 tablespoon cornstarch
  • 2 green onions, chopped (for garnish)

Instructions

  1. Rinse the rice in cold water until the water runs clear and then drain it.
  2. Heat the oil in a wok or large skillet over medium-high heat. Add the pork slices and garlic and stir-fry for about 2-3 minutes until the pork is no longer pink.
  3. Add the diced tomatoes and stir-fry for another minute until the tomatoes start to soften.
  4. Add the uncooked rice and stir until it’s coated with the tomato mixture.
  5. Add the dark soy sauce, light soy sauce, oyster sauce, sugar, and chicken broth. Stir well.
  6. Bring the mixture to a boil and then reduce the heat to low. Cover the wok or skillet and simmer for 20-25 minutes, or until the rice is cooked and most of the liquid has been absorbed.
  7. Dissolve the cornstarch in a tablespoon of water and then add it to the rice mixture. Stir until the sauce thickens.
  8. Garnish with chopped green onions and serve hot.
