  • 1 pound snapper fillets

Instructions

  3. Add 4 cloves of minced garlic and cook until fragrant, for about 1 minute.
  4. Add the rice to the pan and stir to coat with the garlic and butter mixture.
  5. Add 4 cups of chicken broth, 1 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of paprika to the pan and stir to combine.
  6. Bring the mixture to a boil, then reduce heat to low and cover.
  7. Cook rice for about 18-20 minutes until all the liquid is absorbed.
  8. While the rice is cooking, season the 1 pound of snapper fillets with salt and pepper on both sides.
  9. Heat 1 tablespoon of olive oil in a separate pan over medium-high heat.
