- Add chopped onion and minced garlic to the skillet. Sauté them until the onion becomes translucent. It will take approx. 5 minutes.
- Add the following spices to the skillet: 1 teaspoon of cumin seeds, 1 teaspoon of coriander seeds, 1 teaspoon of turmeric, and 1 teaspoon of paprika. Cook the spices for 2-3 minutes while stirring.
- Add 1 pound of Mahi-Mahi fillet pieces to the skillet. Stir the pieces to coat with the spices mixture properly.
- Add the Basmati rice that you rinsed previously, 1 teaspoon of salt, and 2 cups of either chicken or vegetable broth to the skillet.
- Bring the contents of the skillet to boil.
- Lower the heat to the minimum level, and cover the skillet. Let it cook for 18-20 minutes until the rice becomes tender and absorbs all the liquid in the skillet.
- After 18-20 minutes, remove the skillet from the heat source. Let it stand, while covered, for 5 minutes.
