Instructions

  1. Rinse the rice in cold water multiple times until the water becomes clear. Then, drain the rice and set it aside.
  2. Take a large skillet and place it over a medium-high heat. Add 2 tablespoons of vegetable oil to it.
  3. Add chopped onion and minced garlic to the skillet. Sauté them until the onion becomes translucent. It will take approx. 5 minutes.
  4. Add the following spices to the skillet: 1 teaspoon of cumin seeds, 1 teaspoon of coriander seeds, 1 teaspoon of turmeric, and 1 teaspoon of paprika. Cook the spices for 2-3 minutes while stirring.
  5. Add 1 pound of Mahi-Mahi fillet pieces to the skillet. Stir the pieces to coat with the spices mixture properly.
  6. Add the Basmati rice that you rinsed previously, 1 teaspoon of salt, and 2 cups of either chicken or vegetable broth to the skillet.
  7. Bring the contents of the skillet to boil.
  8. Lower the heat to the minimum level, and cover the skillet. Let it cook for 18-20 minutes until the rice becomes tender and absorbs all the liquid in the skillet.
  9. After 18-20 minutes, remove the skillet from the heat source. Let it stand, while covered, for 5 minutes.
  10. Use a fork to fluff the rice and mix it properly. If you want, garnish the dish with cilantro. Your Indian Mahi-Mahi Rice is ready to serve!
