- 2 cups of rice, washed and drained
- 1 cup artichoke hearts, chopped
- 2 cloves garlic, minced
- 1 small onion, chopped
- 2 tbsp vegetable oil
- 1 tsp salt
- 1 tsp ground black pepper
- 3 cups water
- Fried shallots and fresh parsley, for garnish (optional)
- Heat 2 tbsp of vegetable oil over medium heat in a large pot.
- Add 2 cloves of minced garlic and 1 chopped small onion. Cook until the onion has softened and everything is fragrant.
- Add 1 cup of chopped artichoke hearts and continue cooking for 2-3 minutes.
- Add 2 cups of washed and drained rice, 1 tsp of salt, and 1 tsp of ground black pepper. Stir well to combine.
- Add 3 cups of water and bring everything to a boil.
- Once boiling, lower the heat and cover the pot with a lid. Cook for 15 minutes or until the rice has cooked and all the liquid has been absorbed.
- Remove the pot from heat and let it stand with the lid on for 5 minutes.
- Fluff the rice with a fork and garnish with fried shallots and fresh parsley (optional).
