  • 2 kaffir lime leaves
  • 1 stalk of lemongrass, bruised

  • 1/2 cup of coconut milk
  • 1 tablespoon of chopped cilantro
  • 1 red chili, sliced (optional)

Instructions

  1. Rinse the rice in a colander until the water runs clear.
  2. Heat the oil in a large pot over medium heat.
  3. Add the chopped onion and minced garlic, sauté for 3 minutes, or until the onion is softened.
  4. Add the tomato paste, chopped tomatoes, ground coriander, ground cumin, turmeric, salt, kaffir lime leaves, and bruised lemongrass. Cook for 2 minutes while stirring.
  5. Add the rice and stir well to coat with the tomato spice mixture.
  6. Add 2 cups of water and 1/2 cup of coconut milk and bring to a boil over high heat.

  9. Remove the kaffir lime leaves and lemongrass and discard.
