  3. After soaking, turn on the heat to high and bring the rice to a boil. Once boiling, reduce the heat to low and cover the pot with a lid. Simmer for 15-20 minutes or until the rice is cooked.
  4. In the meantime, salt and pepper 4 fillets of mackerel on both sides. Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Cook the mackerel fillets skin-side down for about 4-5 minutes until crispy, then flip over and cook for another 3-4 minutes until cooked through.
  5. In a small bowl, mix together 1 tablespoon of sake, 1 tablespoon of soy sauce, and 1 tablespoon of mirin to make the seasoning sauce.
  6. When the rice is finished cooking, pour the seasoning sauce over the rice and stir it thoroughly. Serve the rice in bowls and place the mackerel fillet on top of the rice. Garnish with 2 tablespoons of chopped green onions and enjoy!
