  1. Heat 2 tablespoons of vegetable oil in a large pot over medium-high heat.
  2. Add 1 chopped onion and 3 minced garlic cloves to the pot and cook for 2-3 minutes until the vegetables become soft.
  3. Next, add 1 tablespoon of curry powder, 1 teaspoon of turmeric, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the pot. Cook for another minute until it becomes fragrant.
  4. Add 1 lb of Mahi-Mahi pieces to the pot and cook for 2-3 minutes until they are browned on all sides.
