  3. Next, add 1 tablespoon of curry powder, 1 teaspoon of turmeric, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the pot. Cook for another minute until it becomes fragrant.
  4. Add 1 lb of Mahi-Mahi pieces to the pot and cook for 2-3 minutes until they are browned on all sides.
  5. Add 2 cups of Jasmine rice, 1 can of coconut milk, and 2 cups of water to the pot. Stir well.
