  3. Add 2 minced cloves of garlic and sauté for an additional 1-2 minutes.
  4. Add 1 diced red bell pepper and 1 bunch of trimmed and chopped asparagus. Sauté for 5 minutes until tender-crisp.
  5. Add the rice to the saucepan and stir, cooking for 1-2 minutes.
  6. Stir in 4 cups of chicken or vegetable broth, 1 teaspoon of salt, 1/4 teaspoon of black pepper, and 1 teaspoon of curry powder. Bring the mixture to a boil.
  7. Reduce the heat to low, cover the saucepan and allow the rice to simmer for 20-25 minutes until all of the liquid is absorbed and the rice is tender.
  8. Fluff the rice with a fork and serve garnished with 1/2 cup of chopped cilantro.
