  • 1 cup Basmati rice
  • 2 cups water
  • 4 salmon fillets, skin-on
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced

Instructions

  1. Rinse the rice in cold water and soak in warm water for 30 minutes. Drain.
  2. In a pot, bring 2 cups of water and 1 tsp salt to a boil. Add the drained rice and stir. Cover the pot and reduce the heat to low. Cook for 15-20 minutes or until the rice is tender.
  3. In a pan, heat the olive oil and fry the salmon fillets, skin-side down, for 4 minutes on each side. Remove and set aside.
  4. In the same pan, add the chopped onions and garlic. Fry until soft and translucent, about 3 minutes.
  5. Add the cumin, coriander, turmeric, black pepper, cinnamon, and 1/2 tsp salt. Fry for another 2 minutes.
  6. Add the saffron threads to the hot water and let it steep for 10 minutes.
  7. Mix the saffron water, melted butter, raisins, and slivered almonds into the cooked rice.
  8. On a large platter, place the rice and top it with the salmon fillets. Spoon the onion and spice mixture on top of the salmon.
