persian zucchini rice ingredients

  • 2 cups basmati rice
  • 2 medium zucchinis, grated
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup vegetable oil
  • 1 tsp turmeric
  • 1 tsp salt
  • 4 cups water
  • 1/4 cup sliced almonds (optional)

  1. Wash the rice a few times until the water runs clear. Soak the rice in water for 30 minutes.
  2. Meanwhile, heat the vegetable oil in a large pot over medium heat. Add the diced onions and sauté until golden brown, stirring occasionally.
  3. Add the minced garlic to the pot and stir for a few seconds.
  4. Add the grated zucchinis, turmeric, and salt. Sauté for 5-6 minutes until the zucchinis are cooked and tender.
  5. Drain the rice and add it to the pot with the zucchinis mixture. Mix well.
  6. Add the water to the pot. Bring the mixture to a boil, then reduce the heat, cover the pot with a lid, and let it simmer for about 25-30 minutes until the rice is cooked and the water is absorbed.
  7. Turn off the heat and let the pot sit for 5-10 minutes before opening the lid. Fluff the rice with a fork.
  8. If using, toast the sliced almonds in a dry pan over medium heat for a few minutes until lightly browned. Sprinkle the almonds over the rice.
  9. Serve and enjoy!

How long does persian zucchini rice last in the fridge?

Persian zucchini rice can be stored in the fridge for up to 4 days after cooking. It is important to let the dish cool down to room temperature before storing it in an airtight container in the fridge, as storing hot food in the fridge can cause it to spoil faster. When reheating the dish, make sure to reheat thoroughly to an internal temperature of at least 165°F (74°C) to ensure food safety. It is not recommended to freeze Persian zucchini rice, as the texture of the rice may change and become mushy when thawed.
