  • 1 block of firm tofu, drained and pressed
  • 1 red bell pepper, chopped
  • 1 yellow onion, chopped
  • 2 minced garlic cloves
  • 1/4 teaspoon paprika

  • 1/4 cup chopped fresh parsley
  • 1 cup uncooked long grain white rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil

Instructions

  2. Add onion and garlic, and sauté until onion is translucent, about 5 minutes.
  3. Add paprika, turmeric, and cumin, and sauté for another minute.
  4. Stir in rice, vegetable broth, and a pinch of salt and black pepper.
  5. Bring mixture to a boil, then reduce heat to low and cover saucepan with a tight-fitting lid.
  6. Simmer for 18 to 20 minutes, or until rice is cooked and liquid is absorbed.
  7. In a separate skillet, add chopped red bell pepper and sauté until tender, approximately 7 minutes.
  8. Crumble tofu into the skillet with the red bell pepper and sauté for 3-5 minutes.
  9. Mix tofu and red bell pepper with the cooked rice, and sprinkle with chopped fresh parsley.
