  • 1.5 lb mahi-mahi filet, cut into small pieces
  • 2 cups white rice
  • 4 cups water
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced

  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin

Instructions

  1. Preheat your oven to 375°F.
  2. Take a pot, put 2 cups of white rice and 4 cups of water into it. Put the pot over high heat and bring it to boil. After that, reduce the heat to low level and let it cook for 18 minutes.
  3. While the rice is cooking, take a large skillet and heat 2 tbsp of olive oil over medium-high heat. Add diced onion, red and green bell peppers, minced garlic, and seeded and diced jalapeno pepper to the skillet and cook them until they become tender, which will take around 5 minutes.
  4. Add small pieces of mahi-mahi filet to the skillet, along with 1 tsp paprika, 1 tsp cumin, 1/2 tsp cayenne pepper, and salt and pepper. Cook them for another 5 minutes until the fish is cooked through.
  5. Stir juice of 1 lime into the skillet.
  6. Divide the rice and mahi-mahi mixture among 4 oven-safe dishes. Place them in the oven and bake for 10 minutes.
  7. Take out the dishes from the oven and serve hot. Enjoy your meal!
