  • 2 cups white rice, rinsed and drained
  • 3 1/2 cups water
  • 1/2 cup diced onion
  • 1/2 cup diced red bell pepper

  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • Chopped parsley, for serving (optional)

Instructions

  1. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Once hot, add the swordfish and cook until lightly browned for about 3 minutes. Once done, remove swordfish from the skillet and set aside.
  2. Add the diced onion, red bell pepper, and minced garlic to the same skillet. Cook everything together for about 5 minutes or until vegetables are soft.
  3. Next, add the rinsed and drained white rice, 3 1/2 cups of water, 1/2 teaspoon of paprika, 1/4 teaspoon of cayenne pepper, and 1/2 teaspoon of salt to the skillet. Stir everything together.
  4. Then, add the swordfish which was cooked previously back to the skillet. Stir everything together evenly.
  5. Bring everything to a boil and then reduce heat to a low setting, cover the skillet, and simmer for 18-20 minutes or until rice is tender.
  6. Remove the skillet from heat and let stand for 5 minutes. Once done, fluff the food with a fork before serving.
  7. Add chopped parsley and lemon wedges as a garnish (optional).
