Instructions

  1. Rinse 2 cups of jasmine rice and set aside for later use.
  2. Mix 1/4 cup soy sauce, 1/4 cup vinegar, 2 tbsp sugar, and 1 tbsp fish sauce in a medium bowl and set aside for later use.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  4. Once heated, add 1 chopped onion and 3-4 cloves minced garlic to the skillet and cook until the onion is translucent.
  5. Next, add 1 chopped red bell pepper and 1 chopped green bell pepper to the skillet and cook for another 2-3 minutes.
  6. Add the rinsed rice to the skillet and sauté until it is lightly toasted for about 3-4 minutes.
  7. Add 2 1/2 cups of water to the skillet and bring to a boil.
  8. Reduce the heat to low, cover the skillet or wok with a lid, and let the rice mixture simmer for about 15-20 minutes or until the rice is fully cooked.
