  • 1 cup of jasmine rice
  • 1 1/2 cups of water
  • 1 tablespoon of vegetable oil
  • 2 garlic cloves, minced
  • 1 tablespoon of grated fresh ginger
  • 1 red bell pepper, chopped

  • 1 lb. of flounder fillets
  • 2 tablespoons of soy sauce
  • 1 tablespoon of fish sauce
  • 1 lime, juiced

Instructions

  1. Rinse the jasmine rice in cold water until the water runs clear. Drain the rice.
  2. In a medium saucepan, combine the rice and water. Bring to a boil over high heat, reduce the heat to low, and cover the saucepan. Simmer for 15 minutes. Remove from heat and let the rice stand for 5 minutes.
  3. Heat the vegetable oil in a large skillet over high heat.
  4. Add the minced garlic and grated fresh ginger to the skillet and cook for 30 seconds.
  5. Add the chopped red bell pepper to the skillet and cook for another minute.
  6. Add the flounder fillets to the skillet and cook for 2-3 minutes on each side or until the fish flakes easily with a fork.
