  • 1 can of coconut milk
  • 1 tbsp. of red curry paste
  • 1 tsp. of ginger, grated

  • 1 red bell pepper, sliced
  • 1 cup of green beans, trimmed
  • 1 lime, sliced into wedges

Instructions

  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat.
  3. Add 1 tbsp. of red curry paste and 1 tsp. of grated ginger to the skillet and cook for 1-2 minutes until fragrant.
  4. Add 1 can of coconut milk, 1 tbsp. of fish sauce, and 1 tbsp. of brown sugar to the skillet. Stir to combine and bring to a simmer.
  5. Add 1 sliced red bell pepper and 1 cup of trimmed and sliced green beans to the skillet. Cook for 3-4 minutes, stirring occasionally.
  6. Season 1 lb. of halibut fillets with salt and pepper, and add them to the skillet. Spoon some of the sauce over the top of the fillets. Cover and cook for 5-6 minutes until the fish is just cooked through and flakes easily with a fork.
  7. Fluff the cooked jasmine rice with a fork and divide it among 4 plates.
  8. Top each serving with a fillet of halibut and some of the vegetable and sauce mixture.
  9. Garnish each serving with 2 tbsp. of fresh cilantro and serve with lime wedges on the side.
