  • 1 cup jasmine rice
  • 2 cups water
  • 1/2 lb. Thai sausage
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp. ginger, grated
  • 2 tbsp. soy sauce
  • 1 tbsp. fish sauce
  • 1 tbsp. vegetable oil
  • 2 green onions, chopped
  • 1/4 cup cilantro, chopped

Instructions

  1. Rinse 1 cup of jasmine rice in cold water. Drain the rice. Take a medium-sized pot and add the rice along with 2 cups of water. Bring it to a boil. Lower the heat, cover the pot and let the rice cook for about 15 minutes until it’s done.
  2. Take a large pan heat 1 tablespoon of vegetable oil on medium-high heat. Add 1/2 pound of Thai sausage and cook it for about 5 minutes until it’s browned.
  3. Next, add 1 sliced red bell pepper, 1 sliced onion, 2 cloves minced garlic, and 1 teaspoon grated ginger to the pan and cook it for another 5 to 7 minutes until the vegetables are softened.
  4. Now, add the cooked rice, 2 tablespoons of soy sauce, and 1 tablespoon of fish sauce to the pan. Mix everything together and cook for another 2 minutes until everything is heated through.
  5. Finally, add the chopped green onions and 1/4 cup of cilantro to the pan as a garnish. Serve hot and enjoy your delicious Thai Sausage Rice!
