Ingredients

  • 1 lb. of tripe, cleaned and cut into small pieces
  • 2 cups of jasmine rice
  • 1 can of coconut milk
  • 2 cups of water
  • 4-5 cloves of garlic, minced
  • 1 shallot, minced
  • 3-4 dried chili peppers, chopped
  • 2 tablespoons of vegetable oil
  • 1 tablespoon of fish sauce
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of sugar
  • Salt to taste

Instructions

  1. Preheat a wok or deep-sided skillet over medium-high heat and add the vegetable oil.
  2. When the oil is hot, add the garlic, shallot, and dried chili peppers.  Stir-fry until fragrant, about 1-2 minutes.
  3. Add the tripe to the wok and stir-fry for 2-3 minutes until slightly browned.
  4. Add the fish sauce, oyster sauce, sugar, and salt to taste. Mix well with the tripe.
  5. Add the jasmine rice to the wok and stir-fry for another 2-3 minutes. Make sure the rice is coated with the tripe and seasoning mixture evenly.
  6. Add the coconut milk and water to the wok. Mix everything well.
  7. Cover the wok with a lid and reduce the heat to low. Let the rice and tripe simmer for about 20-25 minutes or until the rice is cooked completely. 
  8. Once cooked, remove the wok from heat and let it rest for 5 minutes.
  9. Fluff the rice with a fork and serve hot with some chopped fresh cilantro as garnish.
